Quick Crispy Chilli Eggs with Biltong Slices

INGREDIENTS

  • 40g sliced Runder biltong per person
  • 2 x Slices of sourdough bread 
  • 2 x Eggs
  • 1 x Teaspoon crispy chilli oil or chopped fresh chilli
  • Butter or hummus
  • Fresh coriander leaves
  • Optional: avocado slices

INSTRUCTIONS

  1. Drop your butter into the pan to melt it.
  2. Once melted mix in the chilli oil. If you don't have chilli oil just chop some fresh chilli and add some extra virgin olive oil.
  3. Crack your eggs into the butter chilli mix and fry eggs until your liking.
  4. Toast the bread and butter both slices (or use hummus).
  5. Once your toast is ready, place your avocado slices on the toast and add the fried eggs on top.
  6. Add the biltong slices.
  7. Season with salt and pepper, garnish with fresh coriander.
