Like any freshly prepared food, if it is not stored properly, it will spoil. It's important to understand how to store our biltong so that you don't get disappointed. We offer guidance on how to correctly do this. Follow these step by step and you'll be happily enjoying your biltong, all the time!

CAN BILTONG GO BAD?

Yes, absolutely. Even the mighty biltong isn't immune to the ravages of time (or improper storage). But before you panic and throw out your stash, remember this: biltong was invented to keep meat from going bad in the hot, dry African bush, so it can have a much longer shelf life if stored properly. 

The real culprit behind spoiled biltong? Bad storage. If you let it hang out in a damp, humid environment, moisture will start to settle on the surface, creating a spa day for bacteria. So, keep your biltong in a dry, cool place and it’ll stay fresh longer than your last New Year’s resolution.

HOW LONG DOES BILTONG STAY FRESH

In a perfect world where biltong is kept in meat-preserving nirvana, it could last forever — well, at least until it becomes so dry and tough that you'd need a chainsaw to slice a piece off. But since the The Netherlands (Europe) isn't exactly the Sahara Desert, storing biltong here can be challenging. 

 

To avoid it turning into something you'd use to repair your shoes, we recommend eating it all within 3 days. If you're determined to stretch out the enjoyment without turning your biltong into jerky we've got a few tricks up our sleeves to keep it fresh and tasty a little longer.

 

 

 

Follow our step by step guidance for keeping your biltong fresh

Don't be the reason your biltong went to waste

1. Storage By Product

Whole Biltong
Store whole pieces in the freezer wrapped in brown paper. When ready to eat, allow the slab to come to room temperature for atleast 30 minutes before eating. Do not defrost in plastic, rather on a plate. We don’t replace spoiled whole biltong. So use the guidance provided.
 

Sliced Biltong
Keep sliced biltong in a cool, dry place, and avoid containers that trap moisture. Once opened, refrigerate and eat within 3 days.
 

Snap Sticks
These are naturally dry, so mould’s usually not a big concern as they contain little to no moisture. Keep them in their packaging or a brown paper bag. For bulk, freeze them until ready to eat—they thaw quickly!
 

Droëwors
Freeze if you won’t finish them soon, or keep sealed in packaging until you’re ready to snack.

2. Keep Your Biltong Dry 

Moisture invites bacteria. If you like your biltong moist, store it properly to prevent spoilage, but know it’ll dry out over time. We’ve got tips to keep it tender—keep reading!

3. Store In a Cool Dry Place

Once you've opened the bag, the safest place is to store it in the fridge. This excludes our whole biltong pieces.   

Biltong lasts longer in cooler temperatures, avoid humidity. The moisture will ruin the fat and affect the taste.  

 

Keep it in a cool, dark cupboard until you open it, then you can store it in the fridge once opened.

4. Allow Biltong To Breathe

Plastic traps moisture. Once opened its good to give the bag a shake every day or two to prevent mould formation on the biltong slices. Using a brown paper/bread bag can be benficial.

5. The Freezer Is Your Friend

This is particularly and most relevant to whole biltong pieces: 

 

If you want your biltong to stay moist longer, then freeze it! Biltong defrosts quickly, so you can enjoy it and satisfy your cravings without it drying out or it going bad.

6. Long Term Storage 

Use brown paper bags for long term storage. Plastic bags are fine short-term, but transferring biltong to brown paper bags will help keep it fresh in your freezer for up to 6 months.

7. Reporting Badly Received Product

If you open a bag and it has spoiled please let us know.
